For The Roast Chill Pork
1
kg pork with fat
Star
anise 6 to 7 pieces
2
/3 pieces of dry red chilli
light
soya sauce 1 tablespoon
dark
soya sauce 2 tablespoons
Salt
as per taste but add a little first
Water
Roast
the pork with the above ingredients preferably in a pressure cooker till soft.
Don’t cut out the fat . Once done, remove and cut in slices with one layer fat
then meat. Keep aside
The Roast Chili Pork Method
Chopped
onion (or shredded)
Chopped
capsicum (or shredded)
Sliced
green chili
Soya
sauce
Salt
Pepper

table spoon garlic paste
1
tablespoon finely chopped garlic
1
tablespoon white cooking wine
Heat
oil, Add garlic, onion, chilies, capsicum and stir fry till onions
are slightly translucent. Add pork, add soya sauce, salt, pepper, stir fry, and
add some chicken stock or water. Before it’s done add a dash of wine. Then toss
for a few seconds and remove
If
you want gravy do not add wine, add some more stock and the use a little corn
flour dissolved in water to thicken.
Stir Fry Bok Choi
For
the veggie stir fry use your own ingredients, I put the below mentioned.
Bokchoi.
If you don’t get Bokchoi use Chinese cabbage
Mustard
leaf (Sarsu Saag)
White
mushrooms
Chopped
garlic

tablespoon of oyster sauce
A
little chicken stock
Salt
and pepper.
Heat oil, add garlic and brown a bit, then add the veggies and stir fry. Using sesame oil would and a teaspoon of miso paste would enhance the umami flavor.
