Ayam Goreng is Malaysia’s answer to Southern Fried
Chicken. It’s a very simple recipe that requires tossing chicken marinated in a
fragrant curry paste. This was quite the favorite in a Kolkata restaurant which I managed years ago.
2p chicken legs
3 pc chicken breast
cut into strips
Marinade ingredients
Turmeric Powder
Cumin powder
Coriander powder
Galangal (galangal is now available online)
Ginger and Garlic paste
Coconut milk
Lemon grass
Curry powder
Blend the ingredients into a paste, mix well with
chicken add salt. Now refrigerate for 2 hours. For deep frying, dip into
cornflour, then fry
Serve in banana leaf, garnish with chilli flakes and
serve with tomato slices, and cucumber slices
